Could the old maiboard handle modern drives.

You need controller for SATA.

Speedwise all should go through DMA channels.
I'm about to get a couple large drives because I'm running out of space
for system backups. I was thinking of just shifting over to a NAS
instead of populating one of my machines. I've got an old P2 handy that
I converted to fanless operation, not sure if that's sufficient for a
big NAS system.

You also don't have SATA type connectors for the hard drive power.
I'd have to add PCI SATA cards to the system. The P2 did not have SATA
on board.

I would think the cost of buying a more modern mainboard and
power-conscious processor and running those would be less than the cost
of just feeding that old P2, plus all the extra headache you'll have to
go through getting it running reliably, PLUS purchasing the SATA cards
and such...

That's easy, plenty of Molex to SATA power adapters available. I
actually have a couple of those for another machine (a K6) that I
installed a SATA SSD to replace the IDE drive.

I can tell you that some PCI SATA cards - especially if they have fake
RAID - don't have drivers. YMMV.

Not to worry... Linux does software RAID better than some hardware
controllers out there. Just use regular disks, no RAID in the BIOS, then
use (I ought to look it up for ya...) to do your own RAID in Linux.
